Any one will do, but I always use plant-based drinks with no added sugars. Usually I use almond, but oat, rice, walnut and others will work perfectly. You can also use milk or egg whites.

Yes, for example with whole wheat, rye or spelt flour.

How can I substitute vanilla yummy drops?

You can use vanilla essence or a sweetener to taste. If you add honey or agave syrup, or another sugar, it will change the nutritional table of the recipe, adding more sugar and calories.
