How can I substitute whole wheat flour?
You can use oat flour, white wheat, rye or other flour. If you don't have any of these but have oat flakes, you can grind them and use them.
Can I use another nut?
Yes, you can use almonds, peanuts or hazelnuts, for example.
Can I substitute honey?
Yes you can, for example with agave syrup or coconut sugar. You can use another crystalline sugar but it doesn't taste as good.

First step
In a container, add the flour, ground walnuts, cinnamon and fennel. Mix everything well.

Add the olive oil, stevia, honey and water. Mix until it forms a malleable dough with your hands and let it rest for a few minutes.

Make small balls with your hands and arrange them on a baking sheet.

Beat the egg yolk and brush it over (optional).

Bake in the oven, preheated to 185ºC (365ºF) for 20 minutes.
