Very easy berry pie, no added sugars, fresh and delicious. A perfect recipe for a healthy, fresh and tasty dessert.
Why will you love this recipe?
- Has no added sugars
- It is easy to prepare
- It is vegan
- Takes few ingredients
For the base you need:
- Pitted dates
- Whole oat flour
- Walnuts
For the filling you need:
- Coconut milk
- Frozen berries (or fresh but frozen is cheaper)
- Agar agar (or gelatin powder)
How can I substitute the dates?
I personally like dates a lot for the base, since dates give a very pleasant and sweet flavor to the base. You can use raisins or dried figs, however the flavor will not be the same.
Can I use another flour?
Yes, practically any other flour will do. Oat, rye, white wheat flour among others. If you have oat flakes at home, you can use them since everything will be blended.
Do I need to use walnuts?
No, you can use hazelnuts, almonds or peanuts, they will work perfectly in this recipe.
How should the base dough be?
The base dough will look more or less like this image. When everything is blended check if you can form a ball with the dough. If the dough does not come together well, add more plant-based milk as it may be too dry.
I don't have agar agar, now what?
Agar agar is not completely mandatory, however it helps to solidify the filling a little. You can not use it, however the filling might not be as firm, but the flavor will be exactly the same. Another option is to use gelatin powder (see amount below).
Where can I find coconut milk?
I bought my coconut milk at Mercadona, however you can find it in several supermarkets, such as Lidl or Continente.
