You can, any sugar works well in this recipe.

Which plant-based milk to use?

I usually use almond milk with no added sugars, but you can use oat, soy or rice, for example. Another option is to use milk or egg whites.

Note: The cake doesn't last long, it should be eaten as soon as it's fresh and stored in the fridge for up to a day.

  1. First step

    Turn on the oven to 185º.

  2. Second step

    Separate the yolks from the whites and beat the egg whites until stiff. Set aside.

  3. Third step

    Add the remaining ingredients to the yolks and mix well.

  4. Fourth step

    Carefully add the egg whites and fold in gently.

  5. Fifth step

    Place the batter in a pan lined with parchment paper and bake for 20 minutes.
