Can I substitute egg whites? How?

You can use one more egg instead of 100g of whites or you can also substitute it with a plant-based drink or milk, any of them will do.

Can I make it without banana?

Yes of course, however the banana gives a unique texture to this recipe and doesn't taste like banana at all, so if you don't like banana don't worry about it! The banana gives the perfect texture.

Why use coconut flour?

Coconut flour helps immensely with density, I use it to make the batter thicker and the pancakes thicker without having to use more oat flakes. It's not a mandatory step, but you will feel a difference in the batter if you don't reduce the amount of liquid or if you don't use more flakes to increase density.

Can I make a microwave cake?

Yes, you can put the batter in a bowl and microwave it for 3 to 4 minutes.

  1. First step

    In a blender cup, place the egg, egg whites, oat flakes, banana, cocoa powder, cinnamon and vanilla. Blend everything very well.

  2. Second step

    Add the coconut flour. Mix everything.

  3. Third step

    Let the batter rest for 2 to 3 minutes.

  4. Fourth step

    Turn on a non-stick pan over medium heat and make pancakes.

  5. Fifth step

    Wait for the pancakes to cook well on the bottom before turning. Once turned, let them cook for another 1 minute.

  6. Sixth step

    Serve as desired.
