For these pancakes you’ll need:

  • Egg
  • Egg whites
  • Oats
  • Peanut butter
  • Banana
  • Yummy vanilla drops (optional)
  • Cinnamon
  • Coconut flour

I don’t have egg whites, what can I do?

You can replace the egg whites with plant-based milk or regular milk, either works. Or you can use two whole eggs instead, but in this case you may need to adjust the other ingredients, possibly reducing the amount of oats.

Is coconut flour really necessary?

It’s not. I personally love coconut flour in this recipe because it gives more density and makes the pancakes thicker and more moist, but it’s not mandatory. If you want a denser batter, you can use more oats or reduce the amount of liquid (eggs and plant-based milk/egg whites).

Which peanut butter should I use?

Any peanut butter will work, but make sure it’s made from 100% peanuts with no unnecessary additives. I recommend this one from Prozis - it’s amazing. I personally prefer the crunchy version to get those little peanut bits in every bite.

I don’t like banana - can I make this without it?

You can make the recipe without banana, but keep in mind it gives the pancakes a unique texture and natural sweetness. If you want to skip it, try using more vanilla drops to sweeten or swap in another fruit you enjoy.

Pancakes take too long - can I make it as a microwave mug cake?

Yes! Once the batter is ready, you can pour it into a mug or bowl and microwave for 3 to 4 minutes.

  1. First step

    In a blender cup, add the egg, egg whites, oat flakes, banana, cinnamon, and vanilla. Blend everything very well.

  2. Second step

    Add the peanut butter and coconut flour. Mix everything together.

  3. Third step

    Let the batter rest for 2 to 3 minutes.

  4. Fourth step

    Heat a non-stick pan over medium heat and cook the pancakes.

  5. Fifth step

    Serve with the remaining banana and melted dark chocolate if you like.
