This cake is a perfect option for your snacks or breakfasts since it has no added sugar, oil or fat. Furthermore, it is a super simple and easy recipe to make and perfect for using up those darker bananas that we can no longer eat. And yes, they can be those very dark bananas!

With only 77 calories per slice, more than 3 grams of protein, 10 grams of carbohydrates and only 2.3 grams of fat, which is naturally present in the ingredients since no type of fat, oil or butter was used, isn't it fantastic?

For this cake you need:

  • Eggs
  • Plant-based drink or milk
  • Oat flour
  • Coconut flour
  • Bananas
  • Cinnamon
  • Pinch of salt
  • Baking powder
  • Stevia (if it's not sweet enough for your taste)

It's a quite dense cake and doesn't rise much. It has a very moist texture due to the amount of banana it takes, you have to pay attention to that aspect. If you like very moist and juicy cakes, this recipe is perfect!

I don't have oat flour, now what?

If you have oat flakes, you can grind them into flour without any problem. However, you can substitute it for another flour, for example, rye, white or whole wheat, spelt, among others. However, it is not advisable to use only coconut flour, as it absorbs a lot of liquid and does not work very well.

Is coconut flour mandatory?

Not at all, however, it should be substituted in another way. Since it is a flour that absorbs liquid, you should use more of another flour instead. For example, in this case it's 30g of coconut flour, so you should use 60g of another flour, which I mentioned in the point above.

It wasn't very sweet and I don't have stevia, what other sugar-free sweetener can I use?

Another option is Vanilla Yummy drops, I use them a lot, however since it has a vanilla flavor the cake doesn't have such a natural banana flavor, but it works perfectly and a coffee spoon is enough.

Another option for this recipe is to use cocoa powder instead of cinnamon, however being something more bitter you should take into account that it might not be as sweet.

  1. First step

    Turn on the oven at 185ºC (365ºF).

  2. Second step

    In a blender or a mixing cup, add two bananas and blend until it becomes a liquid puree. Set aside.

  3. Third step

    In a container add the eggs, plant-based drink and banana puree. Beat all ingredients well.

  4. Fourth step

    Combine the flours in a container along with the cinnamon and a pinch of salt.

  5. Fifth step

    Add the previous dry ingredients mixture to the liquid mixture. Mix until it forms a uniform batter.

  6. Sixth step

    Add the baking powder and mix. Let the batter rest for a while (2 to 3 minutes).

  7. Seventh step

    Grease a pan with coconut oil and parchment paper so it doesn't stick. Add the batter to the pan and place the banana split in half on top.

  8. Eighth step

    Bake in the oven for 50 minutes.
