A DELICIOUS cake with less than 100kcal per slice, with very simple ingredients, a fantastic yogurt and lemon flavor and of course, with super sweet blueberries in the middle, making a fantastic flavor combination. Will you try it?
It's possible that you have almost all the ingredients at home; if not, they are also super easy to find in any supermarket. Besides being an excellent cake for a healthier dessert, it's also a great snack option, since I added very little sugar-I used a bit of honey, but sweetened the rest with vanilla Yummy Drops (works like vanilla essence) to keep the sugar low.
For this recipe you need:
- Eggs
- Natural yogurt or whipped fresh cheese
- Whole wheat flour
- Lemon (juice and zest)
- Honey
- Coconut oil
- Blueberries
- Vanilla yummy drops
- Baking powder
Which yogurt to use?
You can use, for example, a natural-flavored skyr, which usually has 150g, serving perfectly for the recipe. Another option is to use whipped fresh cheese, which is what I used. Another option is to use a vanilla-flavored yogurt with no added sugars, for example, from Lindahls Nestlé, so you won't need vanilla.
Can I use another flour?
Yes, practically any other flour will work. Oat flour, rye, white wheat, among others.
What other sweetener can I use?
Any sugar will work, such as agave syrup, brown sugar, yellow sugar, and others. Another option is stevia, which considerably reduces the amount of sugar in the recipe.
Do I need to use blueberries?
It's not mandatory; you can make it without any fruit or with raspberries, for example.

Preheat the oven to 185ºC.

In a container, place the eggs, yogurt, lemon juice, coconut oil, and honey. Beat everything well.
