I've never celebrated Valentine's Day, it's true, but this year I really wanted to make some recipes within the mood of this day, because I love decorating my dishes according to the season. So I made these muffins, without any added raspberry sugar. They turned out MARVELOUS!
I didn't use any sugar, they are sweetened with the cookie flavored oat flour I used, which you can find at Prozis. Each muffin has only 51 calories!
For this recipe you need:
- Eggs
- Vegetable drink or milk
- Coconut oil
- Cookie flavored oat flour
- Unflavored oat flour
- Raspberries
- Baking powder
What other flour can I use?
I recommend using flavored oat flour, some sweet flavor so you don't have to use sugar. However, if you don't have it, you can use just oat flour or another, and add vanilla yummy drops, for example, not adding more sugar to the recipe. If you don't have this option, you'll have to use some sugar, like honey, agave syrup, coconut sugar, among others.
I don't have raspberries, now what?
You can use any fruit, like banana, apple, pear, strawberries, among other fruits.

First step
Preheat the oven to 185ºC.

Separate egg yolks from whites and beat the whites until stiff peaks form. Set aside.

Place yolks, vegetable drink, coconut oil, and raspberries in a bowl. Mix everything well.

Add the flours and mix.

Fifth step
Carefully fold the previous preparation into the egg whites.

Sixth step
Add the baking powder and mix well.

Seventh step
Place the batter into muffin tins and bake for 35 minutes.
