How I love easy recipes, and this is one of them! Simple to make muffins, with few ingredients, low in sugars, and with only 67 calories per muffin.
The muffin tins I used are small, so they made 10 small muffins, great for a snack to take with you. Adding more sweetener/sugar if you want them sweeter makes for a great dessert too!
For this recipe you only need:
- Egg
- Plant-based drink or milk
- Oat flour
- Coconut flour
- Agave syrup
- Coconut oil
- Cinnamon
- Baking powder
How to make the cream in the topping?
Very simple indeed! In a bowl add 50ml of plant-based drink, 1 teaspoon of cornstarch, 1 teaspoon of agave syrup and cinnamon to taste. Mix everything well and microwave for 30 seconds. Remove from the microwave, mix everything well and place on the muffins. Very simple and creamy indeed!

Can I make this recipe vegan?
Of course you can, instead of using a chicken egg you can make a vegan egg.
How to make a vegan egg?
You only need one tablespoon of ground flaxseeds and 3 tablespoons of water. Combine the ingredients and wait a few minutes. You can then use it as an egg substitute in this recipe.
I don't have oat flour, now what?
You can use another flour, like white wheat, whole wheat, rye, among others. If you have oat flakes, you can grind them into flour and use them.
Do I need to use coconut flour?
It's not mandatory, however it's a dense flour that helps thicken the batter without needing a lot of it. Instead of 20 grams of coconut flour, use 40g of oat flour, or another flour you use in this recipe.
Which plant-based drink to use? Can I use milk?
Any plant-based drink will work for the recipe, as will milk.

First step
Turn on the oven at 185ºC (365ºF).

In a container place the egg, plant-based drink, coconut oil and agave syrup. Beat everything very well.

Combine the oat flour, coconut flour and cinnamon in a container and mix.

Add the previous mixture to the initial liquid mixture and mix everything.

Finally add the baking powder to the batter and mix.

Sixth step
Add the batter to muffin tins for the oven.

Seventh step
Bake the muffins in the oven for 30 minutes.

Serve as desired.
