Undoubtedly one of the best cakes I've ever made! A chocolate cake with no added sugars and a very low-calorie chocolate syrup, a perfect recipe for a healthier and lower-calorie dessert, but it also works perfectly for a sweet snack or breakfast. Are you going to try it?
This cake is:
- Low in calories, with only 62 calories per slice including syrup
- No added sugars or fats
- Moist

For this cake you need:
- Eggs
- Whipped fresh cheese
- Vegetable drink
- Oat flour
- Cocoa powder
- Liquid stevia (or liquid sweetener)
- Vanilla yummy drops or vanilla essence
- Baking powder
Which fresh cheese to use? Can I substitute in another way?
The fresh cheese/quark I usually use is from Mercadona or Lidl, which is 0% fat and with no added sugars, making it an excellent source of protein. You can replace it with flavorless Skyr, natural or Greek yogurt, these options will work just as well. Another excellent option is to use vanilla-flavored fresh cheese or vanilla yogurt with no added sugars, for example, Nestlé's vanilla Kvarg.
Which vegetable drink can I use?
I personally used almond, but you can use oat (sweeter and more caloric), soy or rice, for example. Another option is to use milk.
Can I use another flour besides oat?
You can use any flour or even grind oat flakes and use them as oat flour in this recipe. Flours such as whole wheat, spelt or rye will work equally well.
I don't have stevia, now what?
- You can use flavored oat flour, for example biscuit, chocolate chips, vanilla or brownie. You won't need to add any other sweetener/sugar or vanilla.
- If you use vanilla yogurt or fresh cheese, you might not need to use any other sweetener, but you should taste the batter to check.
- You can use honey, agave syrup, brown sugar, mascavado, among others, but it will add calories and carbs to the recipe. The amount I recommend is around 40 grams considering it has vanilla. Without vanilla it might be more.
And the vanilla, where can I find it?
Vanilla essence is available in any supermarket. I personally prefer vanilla or custard flavored yummy drops from Prozis, and you can find them here.
For the syrup, can I replace the corn starch?
Yes, rice flour will do as well as, for example, tapioca, both in double the amount, so instead of 10 grams use 20g of these ingredients.
If I don't have vanilla, what can I use?
As in the case of stevia, you can use more sugar, however once again I highlight, it adds more calories to the recipe. In the case of the syrup 15g of sugar, syrup or honey will serve perfectly. With 15g of coconut sugar in the syrup the cake contains only 70 calories per slice!
What is the size of the pan?
My pan is small, I used a small one with a diameter of 20cm.

First step
Preheat the oven to 185ºC.

Second step
Separate the yolks from the whites and beat the whites until stiff peaks form. Set aside.

Mix the yolks, fresh cheese and almond drink and beat everything well.

Add the oat flour, cocoa, stevia and vanilla. Mix everything well.

Fifth step
Add the egg whites to the mixture and fold in carefully.

Sixth step
Add the baking powder and mix everything well.

Seventh step
Place the batter in a greased or parchment-lined pan (20cm) and bake for 40 minutes.

Eighth step
Remove from the oven when cooked and, while it cools, prepare the syrup by adding all the ingredients to a pot, mixing well and placing over medium heat.

Ninth step
Let it cook while stirring until slightly thickened.

Tenth step
Pour the syrup over the cake and serve.
