Each slice without filling has only 69 calories and with the filling it has only 84 calories. A cake with less sugar than conventional ones and no added fat!

For the dough you need:

  • Eggs
  • Vegetable drink or milk
  • Whole wheat flour
  • Boiled pumpkin
  • Cinnamon
  • Brown sugar
  • Pinch of salt
  • Baking powder

For the filling you need:

  • Vegetable drink
  • Cocoa powder
  • Corn starch
  • Brown sugar

Can I use another flour?

Yes, oat, rye or white wheat flour, for example, works very well too.

What pan size?

The pan I used was quite wide and shorter. You can use a longer and narrower one, giving a longer roll. Mine is roughly 40cm by 28cm. Don't use a small pan otherwise the batter will be too high making the rolling process difficult.

Can I use another filling?

Of course, for example melted dark chocolate or none. The cake is very good plain!

How to roll the batter?

After baking, place the cake on a clean kitchen towel. Roll it up with the towel inside and leave it for a few minutes. Unroll from the towel, add the filling and roll it back up.

Can I use another sugar?

Of course, or even honey, agave syrup or coconut sugar. Any sugar will work well!

  1. First step

    Boil the pumpkin until very soft. Once cooked, blend until it becomes a puree.

  2. Second step

    Preheat the oven to 185ºC.

  3. Third step

    In a container, place the eggs and sugar and beat.

  4. Fourth step

    Add the vegetable drink and mix.

  5. Fifth step

    Mix the flour in a bowl with the cinnamon and a pinch of salt.

  6. Sixth step

    Add the dry ingredients mixture to the liquid mix. Mix until it forms a homogeneous batter.

  7. Seventh step

    Add the baking powder and mix.

  8. Eighth step

    Grease a large rectangular pan with coconut oil and parchment paper to prevent sticking. Add the batter to the pan.

  9. Ninth step

    Bake in the oven for 20 minutes.

  10. Tenth step

    Place the cake on a towel and roll it up with the towel inside. Let it rest while preparing the filling.

  11. Eleventh step

    Prepare the filling by placing all ingredients in a small pot. Turn the heat to medium.

  12. Twelfth step

    Let it cook while stirring until the liquid thickens. Set aside.

  13. Thirteenth step

    Unroll the cake, add the filling, and roll it back up.
