Orange and yogurt cake with no added fat and less than 90 calories per slice! If you like yogurt and orange, here's a fantastic recipe and, as usual, easy with ingredients you most likely have at home.

In this recipe, I didn't add much sugar, just a little, and the rest I sweetened with vanilla to have less sugar and calories per slice. If you want this recipe to be completely without added sugars, you can use stevia or more vanilla until it's sweet to your taste.

For this recipe you need:

  • Eggs
  • Natural yogurt or whipped fresh cheese
  • Plant-based drink or milk
  • Whole wheat flour
  • Orange (juice and zest)
  • Brown sugar
  • Vanilla yummy drops
  • Baking powder

Which yogurt to use?

I used a natural Skyr from Lidl; any natural Skyr will work for this recipe. Other options: Whipped fresh cheese or a vanilla-flavored yogurt with no added sugars, for example, from Lindahls Nestlé, and then it's not necessary to use the vanilla.

Can I use another flour?

Yes, practically any other flour will work. Oat flour, rye, white wheat among others.

I don't have Vanilla Yummy drops, now what?

You can buy them at Prozis or use another substitute, such as vanilla essence which you'll find in any supermarket.

What topping did you use?

I used natural yogurt with stevia and just a bit of orange zest.

  1. First step

    Preheat the oven to 185ºC.

  2. Second step

    In a container, place the yogurt and sugar. Beat everything well.

  3. Third step

    Add the orange juice and zest, eggs, plant-based drink, and vanilla. Beat everything well.

  4. Fourth step

    Add the flour and mix everything well until it forms a homogeneous batter.

  5. Fifth step

    Add the baking powder and mix.

  6. Sixth step

    Place the batter in a baking pan, previously greased with coconut oil or lined with parchment paper.

  7. Seventh step

    Bake in the oven for 35 minutes.

  8. Eighth step

    Serve as desired.
