There are several flours that will work well in this recipe, such as oat flour, rye, white wheat and others.
Can I make it without walnuts?
Of course!
Is coconut flour mandatory?
No, but it helps make the dough fluffier and denser. If you don't have it or don't want to use it, you can choose to use another flour to taste in double the amount.
What is the syrup recipe?
In a small saucepan add 100 ml of water, a tablespoon of xylitol, a teaspoon of cinnamon and a teaspoon of cornstarch. Cook over low heat while mixing with a spoon until creamy.

First step
Add the carrot, walnuts, eggs, plant-based drink, vanilla and honey to a food processor. Blend everything well.

Second step
Add the flours, cinnamon and baking powder and mix.

Third step
Add to a tin and bake in the oven, preheated to 180º for 35 minutes.

Fourth step
Remove from the oven and while it cools prepare the cinnamon syrup.

Fifth step
Unmold the cake, pour the syrup over it, add walnuts and it is ready to eat.
