For this recipe you need:
- Egg yolks
- Skimmed milk (I used + Proteínas from Mercadona)
- Cinnamon stick
- Lemon peel
- Cornstarch
- Stevia
- Agave syrup
Which milk to use?
I used Mercadona + Proteínas because it has more protein and makes the recipe more protein-rich, besides being skimmed milk. However, you can use a plant-based drink or another milk, but it will change the nutritional information.
Can I substitute cornstarch?
You can use rice flour double the amount of cornstarch. Tapioca also double the amount. Potato starch, the same amount.
Why use stevia and agave syrup?
I used stevia to drastically reduce the amount of sugar in the recipe and used a little agave syrup to give a more pleasant sweet taste.

First step
Add 400ml of milk or oat drink to a pan. Add the lemon peel and cinnamon stick. Turn on the heat to medium and bring to a boil. When it boils, turn the heat to minimum.

In a container, add the cornstarch and, while stirring with a fork, add 100ml of the remaining milk. Mix everything well.

Third step
Add the egg yolks to the previous mixture and beat.

Fourth step
Add the stevia and agave syrup and mix.

Fifth step
Slowly add the previous mixture to the boiled milk, always using a whisk to mix, while the heat is at minimum.

Sixth step
Increase the heat slightly and let it cook to gain consistency, while stirring.

Seventh step
Remove the lemon peel and cinnamon stick and serve when desired.
