This recipe is not only vegan but also gluten-free, as long as you carefully choose your ingredients. Oats are naturally gluten-free, but they may be processed in facilities that also handle gluten-containing foods, leading to possible contamination. The same can happen with the plant-based milk you choose, so always check the label.

For this recipe you only need:

  • Plant-based milk
  • Oat flour
  • Almond flour
  • Agave syrup
  • Spices to taste (I used cinnamon, nutmeg, and ginger)
  • Olive oil

Which plant-based milk to use?

You can use any plant-based milk or even regular milk, but keep in mind that if you use milk, the recipe will no longer be vegan. If you don’t want added sugars, be sure to check the plant-based milk you choose.

Can I use a different flour instead of oat flour?

Almost any flour will work well in this recipe, except for denser flours like coconut flour. Rye flour, whole wheat flour, spelt, and others will also work well, but they are not gluten-free.

Is almond flour really necessary?

Almond flour gives the cookies an amazing texture, so it’s best not to substitute it. You can find almond flour on Prozis or even make your own almond flour. For this recipe, you can grind peeled almonds until they resemble flour.

What other sweeteners can I use?

You can use any liquid or granulated sugar, but if using granulated sugar, you will need to adjust the amount of plant-based milk to ensure the dough is pliable.

  1. First step

    Place the oat flour, almond flour, and spices in a bowl. Mix everything together.

  2. Second step

    Add the plant-based milk, agave syrup, and olive oil. Mix everything well until a pliable dough forms.

  3. Third step

    Let it rest for a few minutes, while you preheat the oven to 185°C.

  4. Fourth step

    Place the dough ball on parchment paper to make it easier to roll without sticking or falling apart. You can see it in the video above.

  5. Fifth step

    Shape the cookies with any form you have and place them on a baking tray lined with parchment paper.

  6. Sixth step

    Bake in the oven for 12 to 15 minutes until cooked.
