A super fresh roll cake recipe, wonderful for warmer days, with no added sugar or fats! Easy, healthy, and perfect for a refreshing dessert if you use coconut cream in the filling. If you use sugar-free yogurt, it's a great snack!

You will need:

  • Eggs
  • Plant-based drink
  • Whole wheat flour
  • Stevia
  • Vanilla essence or vanilla yummy drops
  • Strawberry jam
  • Whipped fresh cheese or natural yogurt
  • Coconut cream or sugar-free yogurt/fresh cheese
  • Baking powder

Can I use another flour?

Yes you can; for example, oat, rye, or white wheat will work equally well.

Which jam to use?

I used a jam with no added sugars; there are several on the market, some with more calories than others. The one I used was from Mercadona.

How to roll?

First, the batter cannot be overcooked, otherwise it will be hard and dry to fold and will break. You can use parchment paper or a cloth to help roll it while the cake cools to gain its shape.

What size pan?

The pan I used was roughly 40cm by 28cm. Don't use a small pan otherwise the batter will be too thick, making the rolling process difficult.

What is coconut cream?

Coconut cream is the densest part of coconut milk. Leave the coconut milk in the refrigerator overnight to make the filling with the solid part that separates.

Preparation
  1. First step

    Preheat the oven to 185ºC.

  2. Second step

    In a container, place all ingredients except the baking powder and blend well.

  3. Third step

    Carefully add the baking powder and mix.

  4. Fourth step

    Place the batter in a wide pan and spread it well until it forms a thin layer. Bake in the oven for 15 minutes.

  5. Fifth step

    Remove from the oven and roll it with a cloth. Let it cool completely.

  6. Sixth step

    Unroll the roll and add the coconut cream (or yogurt) and the strawberry jam on top of the cream. Roll it back up.

  7. Seventh step

    If there is leftover cream, cover the rest of the cake with it.

  8. Eighth step

    Store in the refrigerator; it lasts 4 to 5 days.
