For this recipe you need:
- Eggs
- Natural yogurt or whipped fresh cheese
- Plant-based drink
- Oat flour
- Agave syrup
- Blueberries
- Vanilla yummy drops or essence
- Baking powder
Which yogurt to use?
I personally use the usual whipped fresh cheese, from Lidl or Mercadona, which is 0% fat, high in protein, and low in sugar, but you can use, for example, natural skyr, natural or Greek yogurt. Another option is to use a vanilla-flavored yogurt with no added sugars, for example, from Lindahls Nestlé, and then you don't need to use vanilla. You also have vanilla-flavored whipped fresh cheese at Lidl, but it's denser, so you might need to add more plant-based drink.
Can I use another flour?
Yes, practically any other flour will work. Whole wheat flour, rye, white wheat, among others.
Which plant-based drink to use?
I used almond, but any will work, as well as milk.
Where can I find vanilla yummy drops?
I use the ones from Prozis, and you can find them by clicking here. Vanilla essence is available in any supermarket.
What other sweetener can I use?
Any sugar will work, such as honey, brown sugar, yellow sugar, among others. Another option is stevia, slightly reducing the amount of sugar and calories in the recipe, though the amount of agave syrup used is very minimal.
Do I need to use blueberries?
It's not mandatory; you can make them without any fruit or with raspberries, for example.
Another option
You could use the recipe for a cake too; since it's a small amount of batter, I recommend doubling the amount for a larger cake.
