Anyone who knows my yogurt and lemon pancakes recipe and likes it will also love this one; it's even easier to prepare than the pancakes! Furthermore, it has fewer calories for the total serving, which might be an advantage and something some of you are looking for.

This recipe is:

  • No added sugars or fat
  • Proteic, the total portion of muffins has more than 17 grams of protein
  • Super easy to prepare
  • With few ingredients
  • Low in calories, with the total serving having only 208 calories and one muffin having only 42 calories.
  • Gluten-free (watch for traces of gluten in rice flour)

For these muffins you need:

  • Egg
  • Natural yogurt or whipped fresh cheese
  • Rice flour
  • Vanilla yummy drops
  • Lemon peel or zest

Which yogurt to use?

I personally used whipped fresh cheese (from Mercadona or Lidl), but you can use any other yogurt, for example, natural Skyr, whipped fresh cheese, or vanilla-flavored yogurt, in which case you can remove the vanilla Yummy drops.

Can I substitute Vanilla Yummy drops? Where can I buy them?

Yummy drops are essential for giving a sweeter taste to the recipe without adding sugar. However, you can use 1 dessert spoon of agave syrup or honey as a substitute, or 1 coffee spoon of vanilla essence. You can find Yummy Drops at Prozis, by clicking here.

What rice flour to use?

If you have celiac disease, I recommend looking for a completely gluten-free rice flour. This flour does not naturally contain gluten, but it may contain traces; check the ingredient list for this information. If you don't have an intolerance, I can suggest the one I normally use, which is Prozis Rice Flour.

Can I use another flour?

Yes, for example, oat flour will also work, but I think rice flour combines best in this recipe.

How many muffins does it make?

Of course, it always depends on the molds you use; for me, it yielded 5 muffins. The molds I used are from Ikea, which unfortunately are no longer available on the website.
