Well, I had a pile of very black bananas at home to use up, so I took the opportunity and made another banana bread, this time with walnuts in the middle, without any added sugar and simply wonderful. It tastes VERY much like banana, and when fresh it makes an excellent snack, I'm warning you now!

This cake is:

  • Without added fats or sugars
  • Healthy and therefore perfect for your snacks or breakfasts
  • Moist, very moist

For this recipe you need:

  • Eggs
  • Egg whites
  • Plant-based drink or milk
  • Oat flour
  • Bananas
  • Walnuts
  • Cinnamon
  • Vanilla essence or Vanilla Yummy drops
  • Baking powder

Can I substitute egg whites?

You can, you can use either two eggs or 100 milliliters of plant-based drink or milk.

Which plant-based drink to use?

I usually use almond drink without added sugars, but you can use oat, soy or rice, for example. Another option is to use milk or egg whites.

Can I use another flour?

You can use any flour or even blend oat flakes and use them as oat flour in this recipe. Flours like whole wheat, spelt or rye will work equally well.

Can I use other nuts?

You can even remove the nuts, but in my opinion it gives an excellent touch to the recipe. You can use hazelnuts, almonds or peanuts.

Preparation
  1. First step

    Preheat the oven to 185ºC (365ºF).

  2. Second step

    Place the bananas, eggs, plant-based drink and egg whites in a blender. Blend everything very well.

  3. Third step

    Add the flour, cinnamon and walnuts to the liquid and mix everything well.

  4. Fourth step

    Add the vanilla, mix and finally the baking powder, fold in carefully.

  5. Fifth step

    Place the batter in a pre-greased or parchment-lined baking tin and bake for 45 minutes.

  6. Sixth step

    Serve as you wish.
