For this pie you need:
- Pitted dates
- Whole oat flakes
- Plant-based milk
- Walnuts
- Coconut milk
- Ripe peaches
- Agave syrup
- Agar-agar
Can I substitute the dates?
In my opinion dates give a very pleasant and sweet flavor to the base. You can always substitute for raisins or dried figs, however the flavor will not be the same.
I don't have oat flakes, now what?
You can use oat flour or any other flour. Rye flour, white wheat, whole wheat among others.
Which plant-based milk to use?
Any drink will do, I usually use almond or oat.
Can I use another nut?
Yes, you can use walnuts, peanuts (I think it combines less well, but it is an option), almonds and or a mixture of them.
How can I substitute Agar-agar?
It helps to solidify the filling a little, it is a vegan substitute for powdered or sheet gelatin. If you use powdered gelatin, then use 12 g or use 6 sheets of gelatin, as they are equivalent to 4 g of powdered Agar-Agar.
I emphasize that using powdered gelatin or gelatin sheet, the recipe ceases to be vegan.
Can I use another sweetener/sugar?
Of course you can, you can use honey (stops being vegan), white, yellow, brown sugar or another to taste.
Which coconut milk to use?
The one I used is from Lidl, which you can see in the image, for me it is one of the best for this purpose.
Other fruit options
You can use mango, strawberries, kiwi and other fruits you like.

First step
Place all base ingredients in a food processor and blend well.

Second step
Add the mixture to a pie pan and press into the base and sides until covered. Reserve in the fridge.

Third step
In a blender add the coconut milk, peaches and agave syrup. Blend well.

Fourth step
Add to a pan and add the agar-agar.

Fifth step
Cook the mixture until it boils.

Sixth step
Add the mixture to the pie base and reserve in the fridge for 3 hours before serving and decorating.
