Do you want a way to include vegetables in your diet without tasting them? This recipe is fantastic for that, because believe me, you won't taste the zucchini! Besides being more nutritious, they only take 4 ingredients, and they also have fewer calories and carbs but more volume. Each serving has 266 calories and 38 grams of protein.
These oatmeals are:
- Completely vegan
- No added sugar
- Easy with only 4 ingredients
- A great breakfast or snack option
You will need:
- Plant-based drink
- Oat flakes or oat flour (flavored or unflavored)
- Plant protein
- Zucchini
Which protein to use?
I used the soy plant protein from Prozis, which you can find by clicking here. The flavor I used was chocolate, which is my favorite. You can also use whey protein, making it no longer vegan but still high in protein.
Which plant-based drink to use? Can I use milk?
Any plant-based drink will work; I really like oat milk, but almond, soy, and rice will have the same effect. You can also use milk or even water, though using water makes it less pleasant.
What oat flour to use?
I personally vary it; sometimes I use only flakes, other days I use cookie, brownie, or other flavored oats.
