Looking for an easy recipe for a healthy snack? Then this one’s for you! These muffins are super simple to make, with no added sugars or oils. They’re not only a great snack but also a healthy dessert option.
I’ve always loved the combination of apple and walnuts, but I had never tried anything with apple and almonds-except in a tart-so this time I tried making muffins with some almond flour and apple, and it turned out amazing! The sliced almonds on top add a fantastic touch, although they’re not included in the nutritional info since I didn’t weigh them.
To add a bit more fiber to this recipe, I also included some flaxseed flour-but this step is totally optional.
For this recipe, you will only need:
- Eggs
- Plant-based milk
- Stevia
- Apples
- Almond flour
- Whole oat flour
- Flaxseed flour
- Pinch of salt
- Baking powder

Do I have to use almond flour?
The almond flour is mainly used to give the muffins an almond flavor, but it’s totally optional. You can simply add a bit more of whichever flour you’re using-in my case, I added more oat flour-and skip the almond flour. Another great option is to grind up a different nut, like walnuts, and make delicious apple and walnut muffins instead!
Can I substitute the oat flour?
Yes, you can substitute it with another flour of your choice, such as whole wheat or rye flour. You can also use certified gluten-free oat flour to make the recipe gluten-free .
No apples? No problem!
You can use another fruit instead-pears work great, especially those that are very ripe or bruised (perfect way to avoid waste, which is what I usually do!). Bananas are another delicious option! As you can see, this is a super versatile recipe.
Other substitutions
You can substitute the plant-based milk with regular milk or even more eggs-just keep in mind that this will affect the nutritional values of the recipe.
The flaxseed flour is optional, so no problem if you don’t have it.
Lastly, I used stevia to avoid adding extra calories, making this recipe a healthier and lighter option for a snack. However, feel free to use any sweetener you prefer-just remember it will change the nutritional content.

First step
In a food processor, add one apple and a bit of the plant-based milk to help with blending. Blend everything very well. You can also use an immersion blender. Set aside.

In a bowl, add the eggs, the remaining plant-based milk, stevia, and a pinch of salt. Mix everything very well.

Add the blended apple and milk mixture to the previous mixture and combine well.

Fourth step
Gradually add the oat flour while stirring.

Fifth step
Add the almond and flaxseed flour. Mix everything well.

Sixth step
Add the baking powder and stir to combine.

Seventh step
Preheat the oven to 185ºC (365ºF) while preparing the muffins.

Eighth step
Spoon the batter into muffin molds.

Top each muffin with 3 thin apple slices. You can also add sliced almonds for a wonderful crunch.

Bake in the preheated oven for 35 minutes.
