For this recipe you need:

  • Eggs
  • Whipped fresh cheese
  • Oat flour
  • Flaxseeds (optional)
  • Baking powder
  • Pinch of salt

Can I use another flour?

You can use whole wheat flour, rye or even spelt. Another option, if you have oat flakes, is to just crush some flakes.

Which fresh cheese to use?

I used 0% whipped fresh cheese from Mercadona (same as Lidl). You can also use, for example, Skyr, Natural Greek or another natural yogurt/whipped fresh cheese. The nutritional information will be for the whipped fresh cheese from Mercadona, Hacendado brand.

What if I don't have whipped cheese or natural yogurt?

You can choose not to use that ingredient, although it provides a huge fluffiness to the bread.

  1. First step

    In a microwave-safe container, add all the ingredients and beat with a fork until everything is well mixed.

    Microwave for 3 or 4 minutes (depends on microwave power).

    Remove from microwave, split in half (optional) and toast in the toaster (essential to make it perfect).
