Besides being a super easy and versatile recipe, as it goes with any topping, it's with no added sugar and very simple.

For the pancakes/waffles you need:

  • Egg and egg whites

Can I substitute the egg whites?

Yes, of course. You can use 100ml of plant-based drink or milk, or another egg and 50ml of plant-based drink.

I don't have oat flakes, now what?

You can use oat flour or another of your choice. Oat flakes help the batter be a bit denser.

Coconut flour, why?

You can remove this ingredient; however, it's fundamental to give density to the recipe, making the waffles very fluffy.

Can I substitute the banana?

Yes, you can use another fruit. The banana helps significantly in keeping the recipe from becoming dry, without needing fat.

Secret for the waffles not to stick to the machine

  1. The batter cannot be too liquid.
  2. The machine must be very hot and properly greased.

  1. First step

    In a blender, add all ingredients except the coconut flour.

  2. Second step

    Blend everything well until it forms a homogeneous batter.

  3. Third step

    Add the coconut flour, mix, and let it rest for one or two minutes.

  4. Fourth step

    In the meantime, turn on the waffle maker and let it heat up well.

  5. Fifth step

    Put a little coconut oil and brush. It prevents the waffle from sticking.

  6. Sixth step

    Place the batter in the machine, close it, and let it cook well. The machine will signal when it's ready, but I prefer to leave it for another minute or two before opening.

  7. Seventh step

    Serve the waffles as desired.
