I'm that person who ALWAYS has bananas at home, and as a banana lover I also take advantage of the softer bananas on sale to make some recipes. So they don't go to waste, seriously, take advantage of these opportunities! As usual I had a bunch of very black bananas at home so I decided to get to work and made a recipe for banana, peanut and chocolate marble cake. What an AMAZING combination!
You will love this cake because:
- Has no added sugar or oil
- It is super easy to make
- It is healthy and a great option for your snacks and breakfasts
- Full of flavor
- Each slice has less than 90 calories
For the cake you need:
- Eggs
- Plant-based milk or milk
- Whole wheat flour
- Coconut flour
- Bananas
- Peanut butter
- Vanilla Yummy drops or essence (optional)
- Cocoa powder
- Baking powder
Can I use another flour?
Yes, practically any flour will do, for example, oat, rye or spelt flour.
And how can I substitute coconut flour?
I use coconut flour to thicken the batter without using much more flour, in this recipe I used 30 grams of coconut flour, to substitute you can use 60 grams of the flour you used before, whether oat, wheat, whole wheat or other.
Where to buy vanilla yummy drops?
You can buy at Prozis, I use mine a lot to sweeten recipes without having to add more sugars.
I don't have peanut butter, now what?
You can use any other nut or seed butter, for example sunflower seeds, almond, cashew, among others. It is not a mandatory ingredient so you can remove it from the recipe completely without compromising the texture immensely.
Can I make it without being marble?
Yes, you can make the recipe without the cocoa and it becomes a banana and peanut cake.
