Another yogurt recipe because they always turn out PERFECT in terms of texture and flavor, and today with a special yogurt that I think fits perfectly in this recipe, but don't worry because any yogurt I mention below will work very well.

For these pancakes you need:

  • Egg
  • Lindhals pear and vanilla flavored yogurt (see other options below)
  • Rice flour
  • Pear
  • Coconut flour

Which yogurt to use?

I used Lindahls for this recipe; I had it open at home to use up and took the opportunity to make the recipe! I bought mine at Continente, but you can also find it at Auchan supermarkets, for example. Another option is to use whipped fresh cheese or natural yogurt, but it will likely need to be sweetened in some way.

If using natural yogurt, how can I sweeten it?

I personally would use vanilla yummy drops to avoid adding sugar to the recipe. However, you can also use a dessert spoon of honey or agave syrup.

Why use coconut flour?

Coconut flour helps immensely with density; I use it to make the batter thicker and the pancakes fluffier without having to use more flour. It's not a mandatory step, especially if you make the recipe as microwave cupcakes.

  1. First step

    In a blending cup, place the egg, yogurt, half a pear, and rice flour. Blend everything very well.

  2. Second step

    Add the coconut flour if you see it's necessary (if it's dense enough for pancakes it's not needed), mix and let the batter rest for 2 to 3 minutes.

  3. Third step

    Cut small pieces of the remaining pear and add to the batter.

  4. Fourth step

    Turn on a non-stick pan to medium heat and make pancakes.

  5. Fifth step

    Wait for the pancakes to cook well on the bottom before flipping. Once flipped, let them cook for another 1 or 2 minutes.

  6. Sixth step

    Serve as desired.
