Which whipped cheese to use?

I usually use whipped fresh cheese from Lidl or Mercadona. Another option is to use any yogurt without added sugars.

I don't have oat flour, now what?

Any flour will be fine in this recipe, for example, whole wheat or spelt. Another option is to grind oat flakes to use as flour.

Coconut flour, why?

Coconut flour absorbs a lot of the liquid in the recipe, so it's not necessary to use a lot of this flour to give density to the recipes. This ingredient is not mandatory, however to make pancakes the batter should be a little dense so it doesn't spread across the pan. If you use this recipe for microwave cake, there's no problem if the batter is more liquid.
