A fresh summer recipe, with an incredible red fruit flavor and rich in protein. The base does not contain any type of cookie, fats or sugars, naturally sweetened with dates and the filling/interior, also without any added sugar, where you use flavored gelatin to sweeten, and nothing else.

Is there a way to replace dates?
Dates are the best option, you can use dried figs or plums, but it won't be as good.
Can I use another nut?
Yes, you can use almonds, hazelnuts or peanuts, for example.
Which whipped cheese to use?
I usually use whipped fresh cheese from Lidl or Mercadona. Another option is to use any yogurt with no added sugar.
Which gelatin to use?
I used Royal 0% gelatin with no added sugar, I personally used strawberry which is my favorite, but you can use whatever flavor you find more convenient.

First step
In a food processor add the dates, walnuts, plant-based drink and oats. Blend everything well.

Place the mixture in a round pan and press against the base and sides until covered. Set aside.

Bring the water to a boil and add the gelatin powder mixing well.

Fourth step
Combine the previous mixture with the whipped fresh cheese and mix.

Fifth step
Pour over the base and let it solidify in the refrigerator for 4 hours.
