The autumn photo season has officially started, which I admit is my favorite time for food and even clothing photography. But no doubt autumn food photos win, for obvious reasons.
This cake turned out simply DIVINE, JUICY, and it has no added oils! I added pieces of walnut in the middle to make it crunchier, but it's totally optional, of course. Each slice has about 115kcal, of which 5g is protein, 14g is carbs, and 4g is fat, because I added walnuts. Without them, it's even lower in calories! You can always make some changes to match your personal taste.
As for the batter itself, it's very simple and with easy-to-find ingredients, as usual. Those who have followed me for a while know that it's rare for me to make overly complicated recipes with hard-to-find ingredients, especially because I don't usually have them at home either.
For this recipe, you will need:
- Apples
- Eggs
- Plant-based drink or milk
- Whole wheat flour
- Coconut flour
- Honey
- Yummy drops of vanilla
- Cinnamon
- Baking powder
- Pinch of salt
- Walnuts
Can I make it with another fruit?
Yes, this recipe is also amazing with pears. I’ve made it before and it turned out wonderful!
Can I use a different flour?
I used whole wheat flour, but you can swap it for another one, such as rye or oat flour. I emphasize that you can make oat flour at home by finely grinding oat flakes! The honey can be replaced by any other sweetener/sugar. Yummy drops of vanilla can be replaced by vanilla essence or more sweetener, but it will add more calories to the recipe. The coconut flour, honestly the only way to replace it is by using the flour you have but in a larger amount, maybe double, since coconut flour has a density that wheat, oat, and other flours don’t have.
Do I really need to use honey? Can I use another type of sugar?
You can use any sweetener of your choice, such as agave syrup, brown sugar, or yellow sugar, among other options.

First step
In a glass, add the plant-based milk and 2 apples cut into pieces. Blend well.

Second step
In a bowl, add the previous mixture, eggs, honey, vanilla, and a pinch of salt. Beat all the ingredients until well combined.

Slowly add the whole wheat flour, mixing well until you have a homogeneous dough.

Fourth step
Add the coconut flour and mix very well.

Fifth step
Add the baking powder and mix in.

Sixth step
Break the walnuts into small pieces and add to the dough. Mix everything together.

Seventh step
Pour the dough into a mold and top with slices of 1 apple. You can also cut apple pieces and mix them into the dough instead of placing them on top.

Eighth step
Place in the oven, preheated to 180º, and bake for 45 minutes.
