Since I love a good apple pie, I couldn't resist inventing a recipe for mini apple tarts. This way, I can just grab one and take it with me, haha!

This recipe is:

For these tarts you need:

  • Almond flour
  • Oat flour
  • Plant-based drink
  • Coconut oil
  • Agave syrup
  • Apple
  • Lemon juice
  • Cinnamon
  • Water

Can I substitute almond flour?

You can, but it doesn't turn out as well. I personally prefer to grind some almonds or walnuts and use the same amount as a substitute.

I don't have oat flour, now what?

You can use another flour or blend oat flakes.

Agave syrup, can it be substituted?

Yes, you can use another liquid sweetener, such as honey (no longer making it vegan) or another syrup. Granulated sugar works, but it compromises the texture of the dough in the end and adjustments may be necessary.

How to substitute coconut oil?

You can use sunflower oil or olive oil, without any problem.

  1. First step

    Combine all the base ingredients and mix. It will form a malleable dough.

  2. Second step

    Divide into 6 equal-sized portions, form balls and press with your hands until they are half a centimeter thick.

  3. Third step

    Place the bases in muffin tins, preferably non-stick, press against the bottom and sides and bake in a preheated oven at 185ºC (365ºF) for 15 minutes.

  4. Fourth step

    While the bases are baking, prepare the filling: cut the apple into small pieces and add to a pan.

  5. Fifth step

    Add the lemon juice, agave syrup, cinnamon and a little water.

  6. Sixth step

    Turn on medium heat and let cook until the apple is soft. If the filling is dry, add a little more water.

  7. Seventh step

    Remove the bases from the oven and place the apple filling inside them. Consume whenever you wish.
