A little recipe with no added sugars because I sweetened it with stevia, meaning it has no extra calories! Of course, you can sweeten it with vanilla Yummy Drops, which would be my choice if I didn't have stevia. I used it in this recipe mainly as a test, and I have to admit I was impressed-it sweetens really well with just a small amount!⁣ The stevia I used was bought at Mercadona, where they also have it in granulated form! But I opted for the liquid one. If you use another sweetener, like honey or agave syrup, you might need to use less plant-based milk/milk or add more flour-adjust until the dough looks like the one in the video.

This recipe is not only fantastic but also versatile because if you don't like peanuts, you can use another butter of your choice, which I will explain below!

I haven't forgotten the nutritional information for each cookie, and since the dough made 16 small cookies, each one has approximately 71kcal, 3g of protein, 3g of carbohydrates, and 5g of fat! They are great to have after lunch or dinner with your coffee, for example. For this recipe, you will only need:

  • Peanut butter
  • Whole oat flour
  • Plant-based milk
  • Stevia
  • Optional, Chopped peanuts - if you're using crunchy peanut butter, it's not necessary, of course

I don't have oat flour, now what?

If you have oat flakes, you can blend them to make oat flour. If you don’t want to or don’t have oats, you can use another flour of your choice. Also, if you use certified gluten-free oats, the recipe will be completely gluten-free, which is great for those with celiac disease! Keep in mind that oats are naturally gluten-free, but they can be processed in facilities that handle gluten-containing products, leading to cross-contamination. If you don’t have any gluten intolerance, there’s no need to pay extra for gluten-free oats.

Can I use another type of butter?

Of course! One of the biggest advantages of this recipe is that you can adapt it to your taste and needs. You can use cashew butter, almond butter, or even sunflower seed butter!

What can I substitute for stevia?

As I mentioned above, I would personally use vanilla-flavored Yummy Drops or vanilla extract. But you can use another sweetener of your choice, such as agave syrup or brown sugar. Of course, changing this ingredient will also affect the dough’s consistency as well as its nutritional value, so keep that in mind.

Which plant-based milk should I use? Can I use regular milk?

Any plant-based milk works well in this recipe, as does regular milk. However, the recipe is originally vegan, so using milk would make it non-vegan.

  1. First step

    Add the peanut butter, vegetable drink, and stevia to a bowl. Mix until well combined.

    Gradually add the oat flour, mixing well.

  3. Third step

    The dough will become malleable in your hands. Take small pieces, roll into a ball, and press slightly with your hands.

  4. Fourth step

    Place the cookies on a baking tray and bake in a preheated oven at 180ºC for 20 minutes.
