Fluffy, voluminous, delicious and juicy grated apple pancakes, without any added sugar or fat and super easy to make! If you are a fan of apples you will really love this recipe.
In a recipe I show how to make two portions of about 4 pancakes. You can add more ingredients if you want, for example, walnuts work very well.
For these pancakes you need:
- Eggs
- Plant-based drink or milk
- Oat flakes
- Apple
- Vanilla Yummy drops
- Cinnamon
- Coconut flour
How many pancakes does it make?
It depends a lot on the size of them, the batter I indicate below is for 2 portions of about 4 pancakes, but you can make 2 large pancakes, for example.
I don't have flakes, now what?
You can use oat flour or any other grain, for example whole wheat, rye or spelt.
Why use coconut flour?
Coconut flour helps dynamic density, I use it to make the batter thicker and the pancakes fatter without having to use more oat flakes. It's not a mandatory step, but you will feel a difference in the batter if you don't reduce the amount of liquid or if you don't use more flakes to increase density.
Can I use egg whites?
Of course! Egg whites are a great source of protein and give a fantastic consistency.
I don't have vanilla yummy drops or essence, now what?
You can use no sweetener, but it doesn't taste as good. There are two options, you can use 1 teaspoon of stevia or use vanilla flavored oat flour, or biscuit or apple and cinnamon, all these flavors are available on the Prozis website.
Another option
This recipe works perfectly for a microwave cake, just place the batter in a bowl and microwave for 3 to 4 minutes.

First step
Grate the apple and set aside.

Second step
In a container to blend, add the eggs, plant-based drink, oats, cinnamon and vanilla. Blend everything.

Third step
Add the grated apple and coconut flour. Mix and let it rest for a bit.

Fourth step
If the batter is too liquid after resting, add more coconut flour. It is supposed to be a relatively dense batter.

Fifth step
Turn on a non-stick pan over medium heat and make the pancakes.

Sixth step
Wait for the pancakes to cook well on the bottom before flipping. Once flipped, let them cook for another minute.

Seventh step
Serve as desired.
