This rice is creamy, tasty and juicy, a great side dish for your main course, although my rice was more the main part than a side dish. In addition to all these benefits, it is a very easy rice to make and protein-rich. Each serving has more than 11 grams of protein.

For this rice you need:

  • Rice
  • Chopped onion
  • Olive oil (optional)
  • Water
  • Soy sauce
  • Mushrooms
  • Cheese

Which rice to use?

I believe any rice will be delicious, however I really prefer agulha rice for this recipe.

Which soy sauce to use?

Preferably a natural soy sauce, without dyes and sugars. I recommend the soy sauce from Lidl.

Which cheese to use?

I used Limiano low-fat cheese, it's one of my favorites for this type of dish where the cheese has to melt into the food. Terra Nostra brand will also work fine.

The olive oil is optional, why?

Because if you want this recipe to have less fat, you will have to brown the onion with a little water instead of olive oil.

  1. First step

    In a pot, sauté the onion and olive oil over medium heat.

  2. Second step

    Once the onion is golden, add the rice and mix. Add water until it is 2 fingers above the rice.

  3. Third step

    Add the soy sauce and mushrooms. Mix well and let everything cook over medium heat.

  4. Fourth step

    Check if the rice runs out of water; if it gets low, add more while it cooks. It will take about 15 minutes.

  5. Fifth step

    Once the rice is cooked, lower the heat to minimum and add the cheese slice broken into pieces throughout the rice.

  6. Sixth step

    Mix and let it cook for another minute or two, then serve.
