This recipe was an experiment that surprised me a lot! I love sweet recipes with pumpkin, and to make it better I have pumpkin from my field to use.

Besides these scones having turned out DELICIOUS, this is a very easy recipe, without added fats, vegan and with few ingredients!

I made a delicious topping, but it was kind of by eye. However I know exactly what I used and it is so easy, it's really a matter of doing it to your taste. Basically I put water, agave syrup, cinnamon, cornstarch in a small pan and let it cook until thickened, simple and wonderful really!

For this scones recipe you need:

  • Raw pumpkin (then cook)
  • Whole wheat flour
  • Vegetable drink
  • Agave syrup
  • Baking powder
  • Vanilla Yummy drops
  • Cinnamon
  • Walnuts

Regarding substitutions, well you can use the flour you want, bearing in mind that there are denser flours than others and you may have to change the amount, but if you use oat or rye, for example, the amount will be the same. Vegetable drink you can use milk, but it stops being vegan! Agave syrup you can exchange for honey (stops being vegan), brown sugar, coconut among others. And finally vanilla yummy drops you can replace with vanilla essence or more sugar to taste, just test the dough and see if it is as you like!

Recipe: Vegan Pumpkin Scones

  1. First step

    In a bowl add the whole wheat flour and baking powder. Mix with a fork.

  2. Second step

    Add the cooked pumpkin to a blending cup and add the vegetable drink, agave syrup, cinnamon and vanilla. Blend everything until it becomes a homogeneous liquid.

  3. Third step

    Add the liquid mixture to the flour and mix well.

  4. Fourth step

    It will result in a malleable dough with your hands. If it is too soft, add a little more flour until it is malleable.

  5. Fifth step

    Add the broken walnuts to the dough, if desired.

  6. Sixth step

    Make a ball with your hands and knead a little.

  7. Seventh step

    Cut into triangles and separate on a baking tray.

  8. Eighth step

    Bake in preheated oven at 180º for 25 minutes, more or less.

  9. Ninth step

    Add a topping to taste, nut butter also looks good.
