How can I substitute egg whites?

A great option is to use one more egg and 50 milliliters of plant-based drink or milk or just one egg and 100 milliliters of plant-based drink or milk. However, by not using egg whites, the recipe becomes less protein-rich.

I don't have oat flakes, now what?

Any flour will work well in this recipe, for example, oat, whole wheat or spelt flour. Another option is to use flavored oat flour, allowing you to completely remove the vanilla sweetener.

Coconut flour, why?

Coconut flour absorbs a lot of the liquid in the recipe, so it's not necessary to use a lot of this flour to give density to the recipes. This ingredient is not mandatory, however to make pancakes it's better if the batter is a bit dense so it doesn't spread all over the pan. In case you use this recipe for a microwave cake, it's no problem if the batter is more liquid.

  1. First step

    Place all the ingredients except the coconut flour in a blender glass. Blend everything well.

  2. Second step

    Add the coconut flour and mix everything well. Let it rest for a minute or two.

  3. Third step

    Make small pancakes with the batter in a frying pan. Let them cook well underneath before turning each pancake.
