⁣ This recipe is simply divine! If you are a fan of banana, especially caramelized, this recipe is for you. Besides having an incredible banana and walnut flavor (it is not mandatory to use walnut, but extremely recommended to those who love walnut), they are protein-rich and with no added sugars. Will you try it?

They usually ask how I manage to make so many pancakes, I use a large grill to be able to make several in a row and so it takes almost no time. Mine I bought at the Barcelos fair, as usual, but I have already found it for sale at Espaço Casa and also Continente.

For these pancakes you need:

  • Egg
  • Egg whites
  • Oat flakes
  • Banana
  • Vanilla Yummy drops (optional)
  • Cinnamon
  • Coconut flour
  • Walnuts (pecan or Californian)

How can I replace the egg whites?

You can replace the egg whites with plant-based drink or milk, either one will work. Another option is to use two eggs, in which case you will have to change the amounts of the other ingredients because of the density of the batter.

Are walnuts mandatory?

No, you can use hazelnuts, almonds or no nuts. I personally love the combination of pecan walnut with banana, if you have walnuts try it!

Why use coconut flour?

Coconut flour helps a lot with density, I use it to make the batter thicker and the pancakes thicker without having to use more oat flakes. It is not a mandatory step, but you will feel a difference in the batter if you do not reduce the amount of liquid or if you do not use more flakes to increase density.

Another option

You can make a giant pancake in one pan, it will be a faster option. To speed up the cooking process, you can put a lid on top.

  1. First step

    In a blender cup place the egg, egg whites, oat flakes, half a banana, walnuts, cinnamon and vanilla. Blend everything very well.

  2. Second step

    Add the coconut flour. Mix everything in.

  3. Third step

    Let the batter rest for 2 to 3 minutes.

  4. Fourth step

    Turn on a non-stick pan over medium heat and make pancakes.

  5. Fifth step

    Immediately place pieces of cut banana over the pancake batter that is cooking (while the batter is still raw on top).

  6. Sixth step

    Wait for the pancakes to cook well on the bottom to flip. Once flipped, let them cook for 3 more minutes for the banana to caramelize.

  7. Seventh step

    Serve as desired.
