Who is a fan of honey and pear? I personally LOVE the combination, it's so so good and this cake turned out simply perfect. But I want to highlight right away that if you don't like honey you can use another sweetener, don't stop trying this delight for that reason.

Which plant-based drink to use?

Any will work, such as oat, almond, rice and soy. I personally used the 0% sugar almond drink from Mercadona. You can also use milk if you prefer.

Can I substitute the coconut flour?

Yes you can, for example in this case as there are 30g of coconut flour, you will have to use 60g of another flour, whether oat, rye or whole wheat or white.

And the whole wheat flour, can I substitute it for another?

Yes, you can use oat flour, rye, spelt or white wheat, for example.

How can I substitute the vanilla?

It's not a mandatory ingredient, but you can use a little more honey or another sweetener to taste, however it will add more calories to the recipe. In terms of quantity a tablespoon of honey/agave syrup will work.

Can I substitute the honey?

You can use agave syrup, coconut flower syrup or another sugar, such as brown, yellow or white sugar, the latter being a refined sugar.

You can make this recipe with apples, which is great.

Pan size I used

As usual I used a small pan because I make smaller recipes, and the pan I used was only 20 centimeters in diameter. If you want a larger recipe add a little more of each ingredient.

  1. First step

    Turn on the oven at 185ºC (365ºF)

  2. Second step

    In a blender add the pears, eggs, almond drink, honey, vanilla and cinnamon. Blend everything very well.

  3. Third step

    In a container mix the flours and gradually add the liquid preparation.

  4. Fourth step

    Let it rest for one or two minutes and add the yeast. Mix carefully.

  5. Fifth step

    Place the batter in a pan previously greased with coconut oil or with parchment paper to prevent sticking.

  6. Sixth step

    Place the sliced pear over the batter and bake for 50 minutes.
