This cake is undoubtedly one of my best creations and one of the cakes I am most proud of. I think the look speaks for itself, but the taste... you have no idea how incredible it turned out. You just have to try it.

For this cake, you need:

Cake:

  • Carrot
  • Eggs
  • Milk or plant-based milk
  • Sweetener (I used stevia)
  • Vanilla essence
  • Whole wheat flour
  • Baking powder

Filling:

  • Milk or plant-based milk
  • Vanilla essence
  • Sweetener
  • Cornstarch
  • Cocoa powder

Which sweetener to use?

I use the sweetener from Prozis, which is stevia-based. You can buy it by clicking here.

Can I use a different flour?

Yes, oat flour, rye flour, or others may work, but I prefer whole wheat flour as it makes the cake fluffier.

Recipe: Healthy Carrot Cake with Brigadeiro Filling

Preparation
  1. First step

    Place the carrot, eggs, plant-based milk, sweetener, and vanilla in a blender. Blend well and pour into a bowl.

  2. Second step

    Add the flour and baking powder and mix.

  3. Third step

    Pour the batter into two small round tins (I used 20cm diameter) and bake in a preheated oven at 180º for 20 minutes.

  4. Fourth step

    Unmold and while it cools, make the filling.

  5. Fifth step

    In a saucepan add the filling ingredients, mix well with a fork, and turn on the heat to medium. Let it cook while stirring with a spatula until it thickens.

  6. Sixth step

    Place the filling over one of the cakes, add the other cake on top, and put the rest of the filling on top. Let it cool and it's ready!
