What if I don’t have hazelnuts?

As I mentioned, this recipe is VERY versatile, meaning you can substitute the hazelnuts with any other nuts you prefer, such as almonds, peanuts, or walnuts. And you'll end up with a cake made from that nut, which is fantastic, don't you think?

Do I need coconut flour?

Honestly, I love coconut flour, as those who have followed me for some time may have noticed, but of course, it’s not mandatory. I usually use it to thicken the batter without adding too much flour. For example, if I use 30g of coconut flour to thicken a recipe, you'd need to substitute it with double the amount of another flour, like whole wheat or oat flour. Keep in mind that different flours have varying densities, so be aware of that when making substitutions.

What other flour can I use besides whole wheat flour?

You can use, for example, rye flour or oat flour. You can even make oat flour at home by finely grinding oat flakes!⁣

I don’t have coconut sugar, what can I use?

You can use any sweetener of your choice, even stevia, which will significantly reduce the cake’s calories. If you use a liquid sugar, like honey, be aware that it might make the cake batter more liquid.

  1. First step

    Place the oat flour, almond flour, and spices in a bowl. Mix everything together.

  2. Second step

    Add the plant-based milk, agave syrup, and olive oil. Mix everything well until a pliable dough forms.

  3. Third step

    Let it rest for a few minutes, while you preheat the oven to 185°C.

  4. Fourth step

    Place the dough ball on parchment paper to make it easier to roll without sticking or falling apart. You can see it in the video above.

  5. Fifth step

    Shape the cookies with any form you have and place them on a baking tray lined with parchment paper.

  6. Sixth step

    Bake in the oven for 12 to 15 minutes until cooked.
