ADDICTIVE AND WONDERFUL RECIPE ALERT! I tell you, these cookies were undoubtedly some of the best cookies I have ever made. Crunchy on the outside and cake-like on the inside, simply amazing.
You will love these cookies because:
- They are easy to make
- Low in added sugars and no refined sugars
- They are not dry
- Less than 70 calories per cookie
For this recipe you need:
- Egg
- Plant-based milk
- Oat flour
- Almond flour
- Coconut sugar
- Coconut oil
- Chocolate chips
- Vanilla Yummy drops
- Baking powder
Which plant-based milk to use?
I personally used almond milk, but you can use oat, soy or rice, for example. Another option is to use milk or water, but water is less tasty.
Can I use another flour?
You can use any flour like white wheat, whole wheat, rye among others. You can also grind oat flakes and use as oat flour in this recipe.
Where can I find the ingredients?
Most ingredients have the link to the ones I use above, where I indicated what your needed for these cookies. The chips I used are from Mercadona and are not dark chocolate, but there are several options on the market. You can also chop pieces of dark chocolate and use.
Can I make it without eggs?
Yes, perfectly! You can use 30 to 40 mililiters more of plant-based milk.
I don't have almond flour, now what?
You can grind almonds or other nuts and use as a substitute. You can also use more oat flour but I personally don't think it turns out as well.
How can I substitute Yummy drops?
You can use more coconut sugar or other sugar to taste, but it increases the calories of the recipe and sugar. Another option is to use vanilla essence, which you find in several supermarkets.
Can coconut sugar be substituted?
You can use another sugar or sweetener to taste, for example honey, agave syrup, brown, muscovado or white sugar.
