These cookies are one of my favorite recipes ever, they are very similar to the cinnamon cookies you find in bakeries, but they have less sugar and are crunchier. Besides all these wonders, they are SUPER simple to make.
They are a great option to eat along with your coffee, as a small dessert, crunchy on the outside and super fluffy on the inside, how not to love? And do you know what the best part is? Here you also find a vegan option of this recipe, in case you don't consume eggs.
For these cookies you need:
- Eggs
- Plant-based drink
- Whole wheat flour
- Coconut sugar
- Coconut oil
- Cinnamon
- Baking powder
Can I use another flour?
You can use oat flour, rye or even spelt. Another option, if you have oat flakes, just grind a few flakes.
What other sugar can I use?
You can use any crystalline sugar, if you opt for a liquid sugar, you will have to reduce the amount of plant-based drink or add more flour because the dough could become very soft.
I don't have coconut oil, how can I substitute it?
You can use another oil, for example olive oil or sunflower oil. You can also remove this ingredient and use more plant-based drink, about 20 to 30 milliliters, however they will be less fluffy.
Which plant-based drink to use?
Any will do or even milk, but I used almond drink.
Vegan Version
For the vegan version, instead of using an egg just use 50ml of plant-based drink, simple as that! This recipe doesn't need an egg substitute.

First step
In a container, add the flour, sugar, cinnamon and baking powder. Mix everything well.

Second step
Add the egg with the plant-based drink and melted coconut oil. Beat the ingredients and add to the dry ingredients.

Third step
Mix everything well until it forms a malleable dough with your hands. Let it rest for 10 minutes.

Fourth step
Turn on the oven at 185ºC (365ºF).

Fifth step
Make balls with your hands and, if you wish, place the balls in a container with a little cinnamon and stir to cover the cinnamon biscuit.

Sixth step
Arrange the biscuits on a baking sheet and bake for 20 minutes.
