Rice and Apple Pancakes

These pancakes are healthy, with fewer calories than regular oat or flour pancakes, totally with no added sugar, easy and perfect for breakfast or a snack.

Making pancakes with rice cakes is great for fluffy pancakes because rice cakes have more volume, fewer carbs and therefore fewer calories. Instead of using 50g of oat flour (+/-184kcal) you only use 2 rice cakes (+/- 65kcal), that's right, less than half the calories!

What you need to make these pancakes:

  • Egg
  • Egg whites
  • Rice cakes
  • Apple
  • Vanilla (I used yummy drops)

Can I substitute egg whites?

Yes, you can use an egg and 30 milliliters of plant-based milk or milk instead.

Can I use other fruit?

You can use various fruits, pear, peach and banana work well.

  1. First step

    Add all ingredients, except the grated apple, to a blender. Blend everything very well.

  2. Second step

    Add the grated apple and mix.

  3. Third step

    Make pancakes or a giant pancake and serve as desired.
