In this article you have 4 suggestions for lunches or dinners, a meat option, a fish option, a vegan one and an almost vegetarian one, because I used ham, but it is optional.
Chicken and Vegetable Rice
This rice is simply divine, healthy and super practical to prepare! The weight of the ingredients are for reference for the nutritional information of the meal, you can change the quantities you want.
The ingredients are:
- 20g chopped onion
- 150g chicken pieces
- Olive oil (optional, not counted)
- 30g grated carrot
- 30g sliced kale
- 50g rice
- Salt
Preparation
Put all ingredients in a pot, and water until covered well. Turn on the heat to medium and let cook more or less between 15 to 20 minutes stirring occasionally.
Which rice to use?
I used needle rice, but you can use basmati, carolino or even brown rice, although the latter takes much longer to cook.
Can I use other vegetables? Or none?
Yes of course, I use the ones I like the most and feel combine well with this meal, but you can use others to your liking or none, although having vegetables is always better in my view.

Vegetable Pot with Seitan
Of course I had to include here a vegan recipe to include all types of diets in this article. A low carb meal, rich in nutrients, protein and totally vegan, shall we get to the recipe?
Ingredients
- 60g onion
- 90g red pepper
- 120g zucchini
- 120g eggplant
- 90g mushrooms
- 300g seitan
- 1 small glass of white wine or beer
- Salt
Preparation
Put all ingredients, except the seitan in a pot, and let cook for 10 or 15 minutes. Then add the seitan in squares and serve.
The quantity I indicated here is for more or less 3 servings.
Can I use other vegetables?
Of course yes, any vegetable will look excellent in this meal.
Can I replace the seitan?
If you want to keep it vegan and protein-rich you can use, for example, tofu. You can also remove the seitan completely being only a vegetable pot to accompany with whatever you want.

Vegetable, cheese and ham omelet
This meal besides being practical is the one that takes less time to get ready. Besides, you have a vegetarian option of this recipe, just remove the ham, and it is also another low carb option!
Ingredients
- 1/2 tablespoon olive oil
- 1 egg
- 100g egg whites
- 10g onion
- 30g mushrooms
- 30g kale
- 1 slice light cheese
- 40g cubed ham
Preparation
Place olive oil, onion, vegetables and mushrooms in a frying pan/saucepan. Let sauté for a few minutes until more or less cooked. Meanwhile beat the egg and whites in a bowl and add the cheese and ham to the mixture. Add to the frying pan and cover to cook on top for 3 or 4 minutes.
Other options
You can use other vegetables, you can even use already cooked vegetables, for example. You can remove the ham and cheese, as you wish.

Hake Stew
Fish fan? Then you will love this recipe! It turns out so good and again, it is super practical to prepare.
Ingredients
- 20g sliced onion
- 60g tomato pulp
- 2 hake medallions or loins
- 20ml white wine
- 200g potato
- Bay leaf and sweet paprika
- Salt
Preparation
Just put everything in a pot and add a little water, about a small glass. Turn on the heat to medium and bring to a boil. When it boils reduce to minimum and put a lid on top leaving it to cook 15 minutes. Serve as desired
Which potato to use?
Whichever you want, I like white potato more in this recipe, but if you prefer you can use sweet potato.
Can I use tomatoes?
Yes of course, 2 tomatoes will work perfectly for this recipe.
