Marie cookie cake, how can you not be a fan? Nothing is comparable to the more caloric and original versions, but I tell you that this SUPER EASY version without any added sugar was not left behind. My mother loved it, I loved it and I'm sure you will too.
In addition to having no added sugars or fats, it is ridiculously easy and has very few ingredients and, to improve, I give you two options on how to do it.
Which cookie to use?
I used the 0% Marie cookie from Mercadona, which you can see in the image, but you can use any other cookie. If you want it to have less sugar, then use cookies without added sugars, I've seen them from several brands, like Auchan and Pingo Doce.
More protein version
So for this version you need:
- 500g of natural whipped fresh cheese (quark cheese)
- 2 scoops of protein powder vanilla or cookies & cream flavor
- 1 package of Marie cookies without added sugars
- Cold coffee
Preparation is as simple as mixing the cheese with the protein to create the cream. Dip the cookies in the coffee and start making the layers, first cookie then cream, cookie, cream and so on.
Quark cheese should be quite thick; if it's too liquid, covering the cookies becomes a bit tricky. Examples of thick quark options are the Aldi brand or the Lidl one in the 250g blue package. If you don't have thick cheese, you can add a teaspoon of Xanthan Gum to the cheese.
Version without protein powder
For this version you only need:
- 500g of vanilla flavor yogurt/whipped fresh cheese
- 1 package of Marie cookies without added sugars
- 100-150ml of cold coffee (can be more if you leave the cookies submerged for a long time)
The preparation is once again super simple, just dip the cookies in the coffee and start making layers of cookie and yogurt until the ingredients run out.
Which yogurt/fresh cheese to use?
There are several options, the best are those with denser yogurts/fresh cheeses, for example, vanilla flavor YoPro yogurt or Lidl's Vanilla Whipped Fresh Cheese; in these cases you would need 2 or 3. You also have the option of large-format Lindahls Vanilla yogurt, but it's very liquid, so I advise using a bit of xanthan gum or some thickener.
If you don't have any of the options above, you can also use natural Greek yogurt or natural whipped fresh cheese and add vanilla essence or vanilla Yummy drops.

First step
Dip 7 cookies in coffee, remove and place on a plate in a "flower" pattern.

Spread the yogurt on top and repeat the same process 3 more times, for a total of 4 cookie layers.

Spread the remaining yogurt on top and sides to cover everything well and add crushed Marie cookies on top.

Store in the refrigerator.
