Which plant-based drink to use?

I used almond, but any will do like oat, soy, rice, coconut, as well as milk. You can also use the water from coconut cream, when it gets cold the fat rises and the water stays at the bottom, you can use that water in this recipe, if the water from a can is not enough for the recipe, add more plant-based drink to your taste.

Can I use another flour? And coconut flour?

Yes you can, oat, rye or white wheat flour work perfectly in this recipe. Regarding coconut flour, it's essential to give density, however if you don't have it you can use one of the mentioned flours but double the weight, that is, if this recipe calls for 25 grams of coconut flour, you would have to use 50 grams of one of the mentioned flours.

I don't have grated coconut, now what?

You can make it without grated coconut, but it won't be the same thing of course!

Where to buy vanilla yummy drops?

You can buy them at Prozis, I use mine a lot to sweeten recipes without having to add more sugars. If you want to use essence, you can find it in any supermarket.

Can I substitute agave syrup?

Yes, you can use honey, sugar, coconut sugar (may darken the cake), brown sugar, among others.

  1. First step

    Turn on the oven at 185ºC (365ºF).

  2. Second step

    Separate the yolks from the whites and beat the whites until stiff peaks form. Set aside.

  3. Third step

    In a container, place the yolks, plant-based drink, agave syrup and vanilla. Mix everything very well.

  4. Fourth step

    Gradually add the whole wheat flour and grated coconut to the previous mixture.

  5. Fifth step

    Carefully fold the previous mixture into the whites. Mix everything well.

  6. Sixth step

    Add the coconut flour and mix. Let it rest for two or three minutes.

  7. Seventh step

    Add the baking powder and mix.

  8. Eighth step

    Prepare a pan with coconut oil or line it with parchment paper and add the batter.

  9. Ninth step

    Bake for 45 minutes.

  10. Tenth step

    While it bakes, you can prepare the <a href="https://anaazevedo.com/en/p/healthy-chocolate-frosting">frosting</a>.

  11. Eleventh step

    Remove from the oven, let it cool completely before putting the frosting on top and consume as desired.
