Carrot cake recipe without any added sugar and you also have the chocolate filling recipe I made for this wonderful cake. Both the cake and the filling recipes are extremely simple to make, let's go to the recipe?

For the cake you need:
- Raw carrots
- Eggs
- Vegetable drink or milk
- Whole wheat flour
- Coconut flour
- Coconut oil
- Stevia or other calorie-free liquid sweetener
- Vanilla yummy drops (or essence)
- Baking powder
What vegetable drink to use?
I used almond drink, but you can use another, preferably without added sugars. Milk will also work perfectly for the recipe.
Where can I find stevia? And vanilla yummy drops?
You can find stevia for sale in some supermarkets, such as Mercadona, but also at Prozis, click here to order. The Vanilla Yummy Drops I use are also from Prozis, I leave the link here.
How can I substitute stevia?
As indicated above, by another sugar-free liquid sweetener, I think there is at Continente for example, however you can also replace it with about 60 grams of sugar to your liking, be it honey, agave syrup, coconut sugar, among others.
Can I use another flour?
Yes, for example oat, rye or spelt work very well.
Is coconut flour mandatory?
No, I just like using it to give density to the recipes without using more grain flour. In this case I used 20 grams of coconut flour so in substitution you can use 40 grams of the flour you used previously.
Can I replace the coconut oil?
Of course, you can use olive oil or 100% sunflower oil. You can also remove the ingredient, making the recipe less caloric, but it will also be a less fluffy cake.
How to make the chocolate topping?
For my topping I used:
- 100ml vegetable drink (you can use milk)
- 20g corn starch
- 20g cocoa powder
- 20g coconut sugar
To prepare, just add all the ingredients in a pot, turn the heat to medium low and let it cook while stirring until it thickens. I prepared it while the cake was baking.

First step
Preheat the oven to 185ºC.

Separate yolks from whites and beat the whites until stiff. Set aside.

In a blender cup, place the carrot and blend well.

Fourth step
Add the yolks, almond drink, coconut oil, stevia, and vanilla to the carrot. Mix everything well.

Fifth step
Add the whole wheat flour and coconut flour. Mix everything very well.

Sixth step
Carefully fold the egg whites into the mixture.

Seventh step
Add the baking powder and mix.

Eighth step
Place the batter in a non-stick pan previously greased with coconut oil.

Ninth step
Bake for 45 minutes.

Tenth step
Remove from the oven, let cool, and spread with the chocolate topping (see suggestion below).
