For the cake you need:

  • Eggs
  • Plant-based drink or milk
  • Whole wheat flour
  • Bananas
  • Peanut butter
  • Vanilla Yummy drops or essence (optional)
  • Cinnamon
  • Baking powder

How many muffins does it make?

It always depends on the size of the tins, I used relatively large muffin tins and it made about 16.

Can I use another flour?

Yes, practically any flour will work, for example, oat, rye or spelt flour.

I don't like peanuts, now what?

You can use any other nut or seed butter, for example from sunflower seeds, almond, cashew, among others. If you don't have any you can just leave it out. There's no great need to add fat to this recipe, as the banana already gives the perfect texture.

You can make this recipe as a cake instead of muffins, the only difference is the baking time, which is about 50 minutes instead of 40.

  1. First step

    Preheat the oven to 185ºC (365ºF). Add the banana to a blender and blend until pureed.

  2. Second step

    In a container mix the banana puree, plant-based drink, peanut butter, vanilla and mix everything well.

  3. Third step

    Separate the yolks from the whites and add the yolks to the previous preparation and mix. Add the flour and cinnamon and mix. Set aside.

  4. Fourth step

    Beat the egg whites until stiff peaks form.

  5. Fifth step

    Gradually add the initial mixture to the egg whites. Fold in carefully.

  6. Sixth step

    Add baking powder and fold in again.

  7. Seventh step

    Place the batter in muffin or cake tins and bake in the oven for 40 minutes.

  8. Eighth step

    Remove from the oven, let cool, and decorate as you wish.
