Creme brulee fans out there? Then this recipe is definitely for you! A healthy breakfast or snack option with a wonderful creme brulee flavor, gluten-free, high-protein, sweetened only with vanilla drops, meaning no added sugar.
When I initially launched this recipe on my instagram it was a hit, so I couldn't resist bringing it to my blog.
For this recipe you will need:
- Eggs and/or egg whites
- Oat drink and/or milk
- Rice flour
- Vanilla yummy drops
- Cinnamon stick
- Lemon peel
Can I use another plant-based drink or milk?
Oat drink has an incredible sweet taste and that's why I prefer it in this recipe, in case of using a vegan drink. Regarding the others, I've tried soy but it was quite unpleasant, almond drink works but doesn't look as good as oat and rice drink also works well in this recipe. In my opinion, the ones that work best are milk or oat drink.
What other flour can I use?
You can use cornstarch, it will have the same effect and will be equally delicious. Oat flour doesn't look as good, although it's still good. I haven't tried other flours, I think it's a matter of testing.
Where can I find vanilla yummy drops?
The ones I use are from Prozis. Vanilla essence will also look good but I have a preference for the ones I use. If you don't have any of these options, you can use sugar, however it will no longer be a recipe without added sugars and will also have more calories.
Which rice flour to use?
I personally prefer Blédina's rice flour for this recipe, which is a flour specifically for baby food, providing an incredible texture. I think Nestum's will have the same effect. Prozis also has rice flour that works very well.
NOTE: The nutritional information below is for the use of 1 egg and 100g of egg whites since it is the high-protein option.

First step
In a small pan, place the plant-based drink, cinnamon stick, lemon peel and vanilla.

Second step
Bring to medium heat and bring to a boil.

Third step
After boiling for one minute, reduce the heat to minimum and add the beaten eggs.

Fourth step
Immediately add the rice flour gradually.

Fifth step
Stir while it cooks until it reaches the desired consistency.

Sixth step
Remove from heat, remove the cinnamon stick and peel and serve as desired.
