This cake has an AMAZING brownie-like texture! Bananas undoubtedly have a fantastic power in terms of flavor, as they sweeten a lot, and in terms of texture, because there's no need to add any fat to make a juicy cake.
From the ingredients, you'll see that I didn't use any kind of honey, I only sweetened with banana and yummy vanilla drops from Prozis, because I think it pairs really well and I didn't want to add more sugar, to make it a great cake for snacks. Of course, you can sweeten however you like, just with banana, for example, or add another sweetener like honey, agave syrup, coconut sugar, among others. There are many possibilities, just test the batter before adding the baking powder and add whatever you like to sweeten.
Since I didn't use sugar, this cake is super low in calories, with only 85kcal per slice! Isn't that fantastic???
For this recipe, you will need:
- Eggs
- Plant-based milk or milk
- Large ripe bananas
- Raw cocoa powder
- Whole wheat flour
- Yummy vanilla drops (optional)
- Baking powder
What other flour can I use?
In this recipe, I used whole wheat flour, but you can swap it for another, like rye or oat flour, for example.
Which cocoa powder to use?
For the cocoa powder, I used Prozis', it's definitely one of my favorites, but you can find it at any supermarket. Just make sure it's pure cocoa powder and not chocolate powder, which contains unnecessary additives and is more processed.
I don't like banana, what now?
You can try making it with cooked sweet potato, for example, between 50 to 100 grams. Let me know how it goes!

First step
In a cup, add the plant-based milk and 2 apples chopped into pieces. Blend well.

Place the previous mixture, eggs, honey, vanilla, and a pinch of salt into a bowl. Beat all ingredients until everything is well combined.

Gradually add the whole wheat flour, mixing well until you have a smooth dough.

Fourth step
Add the coconut flour and mix very well.

Fifth step
Add the baking powder and mix.

Sixth step
Break the walnuts into small pieces and add to the dough. Mix everything together.

Seventh step
Add the dough to a pan and place slices of 1 apple on top. You can also chop pieces of apple and add them to the dough instead of placing them on top.

Eighth step
Place in the oven, preheated to 180º, for 45 minutes.
